Serves 4 as a side dish (or 2, generously - It's that good)
-1 lb of brussel sprouts
-5 strips of bacon
-1/2 tbsp of unsalted butter
-1 tsp of salt
-1/2 tsp of black pepper
- Remove any loose, dried, or discoloured outer leaves from the brussel sprouts.
- Rinse brussel sprouts and shake off excess water.
- Trim off bottom ends of brussel sprouts, and cut in half, lengthwise.
- Slice bacon thinly crosswise into little matchsticks.
- Heat a large skillet over medium heat.
- Into the dry pan (do not add any oil), add bacon and cook for about 3 mins.
- Add brussel sprouts and toss to coat in bacon fat. Add salt and pepper.
- Turn the brussels sprouts so the cut sides are down on the pan.
- After about 5 min, toss brussels sprouts and cook for another 5 min or so. Add butter, allow to melt and coat brussel sprouts.
- The brussel sprouts are done, when the leaves are bright green and tender, but not mushy. Serve immediately. Enjoy!
