Recipe: Brussel Sprouts with Bacon

C'mon, bacon is the ultimate condiment.  It makes everything better! Even brussels sprouts. Anyone that thinks they don't like brussel sprouts needs to try this recipe. It's that amazing!

Serves 4 as a side dish (or 2, generously - It's that good)

-1 lb of brussel sprouts
-5 strips of bacon
-1/2 tbsp of unsalted butter
-1 tsp of salt
-1/2 tsp of black pepper

  • Remove any loose, dried, or discoloured outer leaves from the brussel sprouts.
  • Rinse  brussel sprouts and shake off excess water.
  • Trim off bottom ends of brussel sprouts, and cut in half, lengthwise.
  • Slice bacon thinly crosswise into little matchsticks.
  • Heat a large skillet over medium heat. 
  • Into the dry pan (do not add any oil), add bacon and cook for about 3 mins. 
  • Add brussel sprouts and toss to coat in bacon fat. Add salt and pepper.
  • Turn the brussels sprouts so the cut sides are down on the pan.
  • After about 5 min, toss brussels sprouts and cook for another 5 min or so.  Add butter, allow to melt and coat brussel sprouts.
  • The brussel sprouts are done, when  the leaves are bright green and tender, but not mushy.   Serve immediately. Enjoy!
Tip: When buying brussel sprouts, make sure they are tightly closed and firm.  Avoid shrivelled, loose or discoloured leaves.  If they have a strong cabbage smell, they are not as fresh.
