Recipe: Caesar Salad Dressing - From Scratch!


Caesar salad - it's complex flavours and textures are so addictive, and made from such interesting ingredients.  Most people don't even know that there's anchovies are in there, or at least are supposed to be!  This is a  really easy dressing to make, and is so simple yet satisfying.  Store in a jar and it will last in your fridge for a week.  That's if you don't finish it all first....


Makes  about 2 cups

Ingredients:
-1 egg yolk*
-3 tbsp fresh lemon juice
-1 tsp minced garlic (about 1 small clove.  If you like it extra garlicky, feel free to add more)
-1/2 tsp Worcestershire sauce
-1/4 tsp red pepper flakes
-1 tbsp Dijon mustard
-2 anchovy fillets, finely minced and mashed
-1/3 cup extra-virgin olive oil
-3/4 cup vegetable oil

-Salt and freshly ground black pepper to taste

  • In a medium bowl, whisk together the egg yolk, lemon juice, garlic, Worcestershire, pepper flakes, mustard, and anchovies. Slowly whisk in the oils to emulsify. Season, to taste, with salt and pepper.
  • Toss with clean, dry, chopped romaine lettuce, with cooked bacon, croutons, and freshly grated Parmesan cheese.


*RAW EGG WARNING :
Raw eggs, like raw meat or dairy, poses a slight risk of salmonella or other food-borne illness. To reduce this risk, use only fresh, properly refrigerated, clean grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
