Recipe: Split Pea and Ham Soup


This is a classic soup that often gets ignored.  Granted split peas are not the most appetizing shade of green; but if you can overcome it's humble appearance, you'll be rewarded with a delicious satisfying soup!

Serves 6

-2 cups of dried split green peas
-1 tbsp olive oil
-1 large onion, finely diced
-1 large carrot, diced
-2 ribs of celery, diced
-2 cloves of garlic, minced
-1 litre low sodium chicken broth
-175 gram thick cut smoked ham, diced
-1/4 tsp dried thyme
-1/4 tsp dried oregano
-2 bay leaves
-1 tsp salt
-1/2 tsp black pepper
-scallions, thinly sliced crosswise

  • Rinse the peas under cold running water.  Place in a large pot and cover generously with water.  Bring to boil for 5 minutes, skimming any foam that surfaces.  Drain peas and rinse out pot.
  • Return pot to the medium heat.  Add oil, onions, celery and salt.  Cook for 5 min, stirring occasionally until softened.
  • Add carrots and garlic and cook for another minute.
  • Add peas and chicken stock.  Stir to combine.
  • Bring stock to a boil.  Add ham,dried herbs and black pepper.
  • Cover with a tight fitting lid.  Reduce heat and simmer for 90 minutes.
  • Remove bay leaf, and adjust seasoning to taste with salt and pepper.
  • Serve warm. Garnish with some thinly sliced scallions.  Enjoy!
