Recipe: Free Chocolate Banana "Ice Cream"

Alright, so it's mid-March and it'll be summer before you know it.  You"ll look down at your muffin-top by the pool and think "Why did I eat like a Sumo wrestler in training for months?"  Well I can't help you with your winter insulation (especially since I have my own) but I can help with a low fat healthy dessert recipe!  I know that sounds like an oxymoron, but my husband Kruno and I devoured it so fast we only have  this semi-blurry picture as evidence.   That's how good it was. Intrigued yet?

If lactose is your nemesis, this is also dairy free!

Serves 2 generously (about 4 large scoops total)

Equipment:  Blender or food processor.

Ingredients:
-3 ripe bananas
-2 tsp maple syrup (optional)
-1 1/2 tbsp unsweetened cocoa powder

  • Slice bananas and freeze until completely frozen
  • Place frozen bananas in a food processor and pureed until smooth and has the texture of soft serve ice cream.  This will take a few minutes.  You may have to scrape down sides occasionally.
  • Add maple syrup and cocoa powder and blend completely.
  • Serve immediately. That's it!
