Grilled Pesto Scallops with tomato risotto |
Good pesto is packed with so much flavour and goes well with so many foods. Here are a few of my favourite ways to enjoy it!
1.) As a spread or dip - Mix with some mayo or softened butter. Great in a sandwich. Dip fried veggies or seafood with pesto mayo... steak or seafood with pesto butter....You'll be tempted to double-dip!

2.) Sauce- Toss cooked pasta with pesto and some of the starchy pasta water or some cream. Instant sauce! Substitute pesto for tomato sauce on your next pizza. I like to make pizza at home with some store-bought pizza dough (leftover chicken works great on a pesto pizza)
3.) Meat - Lightly coat chicken or seafood (shirmp, fish, scallops) with pesto. Season with additonal salt and pepper and cook. Broil, grill, or roast..... it will all taste like delicious.
