Hummus, the popular Middle Eastern dish. The name is often spelled in various ways and comes from the Arabic word for chickpeas - and making it couldn't be easier!

Makes 2 cups
-one 19oz can of chickpeas (also called garbanzo beans) drained
-2 small cloves of garlic
-4 tbsp of extra virgin olive oil
-3 tbsp of tahini (ground seasame paste)
-juice of 2 lemons
-1/2 tsp salt
-water
- In a food processor or blender, pulse all the ingredients with about 2 tbsp of water.
- Add more water, a tablespoon at a time until the puree is smooth but still thick.
- Adjust seasoning with salt and pepper to taste.
- Scoop into a bowl and drizzle some olive oil and sprinkle some paprika on top. Serve with toasted pitas and/or veggies.
