So the long weekend is here, and what better to do than eat until you can't move? And what is better to eat than burgers?! These burgers are stuffed with bacon and cheese - which is always a wonderful surprise!
About a pound of meat with make about 8 thick mini burgers. If you are serving other food, 2 per person is more than enough. Also, I do not suggest using lean ground beef. A juicy burger needs some FAT!
psst... I have to confess, the picture on the left is not my actual burger - we ate them all before I could take a picture! Sorry.
Makes 8 mini burgers
-1 lb of ground beef
-3 strips of bacon, cut into matchsticks (about 3 mm thick)
-1/2 cup of shredded mozzarella cheese
-salt and pepper
- On medium heat, cook the bacon.
- Remove bacon from pan and drain the excess fat on a paper towel.
- Once the bacon has cooled, add the bacon and cheese in a medium bowl and mix to combine. It should be about equal part bacon and cheese.
- Divide the beef into eighth portions. Not only does it look nicer when they all look uniform, but it will ensure even cooking of all the burgers.
- In your hand spread out the meat to about 1/4" thickness
- Take a tablespoon of the bacon/cheese mixture and place in on the meat.
- Fold over the meat, sandwiching the filling and shape into a round patty. Ensure there are no gaps and the filling is not visible.
- Continue with remaining beef and filling.
- A few minutes before cooking, sprinkle both sides of the burgers generously with salt and pepper. Don't be shy! This will give a good crust to the burger and a lot of the salt and pepper will fall off during cooking.
- Serve immediately on small dinner rolls with condiments. Enjoy!
