Recipe: Oven Roasted Pork Ribs


Those of you who aren't new to my blog, may have noticed I LOVE pork! And since my barbecue is currently buried in snow, the oven will work just fine for some yummy pork ribs.  This recipe only requires about 10 min of active work and the oven does the rest.  It doesn't get much easier is that!


You should note these are dry pork ribs.  They are much cleaner to eat, as I'm a bit thrown off by the vision of people licking their fingers....  But fear not, these are full of flavour and incredibly tender!

Serves 4

Ingredients:
-2 racks pork back ribs
-olive oil
-Spice Rub (below)

Spice Rb:
-2 tbsp brown sugar
-2 tbsp onion powder
-2 tbsp garlic powder
-2 tbsp dried oregano
-2 tbsp paprika
-1 tbsp hot chili powder
-1 tbsp ground coriander
-1 tbsp ground cumin
-1 tbsp salt
-1/2 tbsp black pepper

  • Combine all ingredients for spice rub in a bowl and mix together thoroughly.
  • Remove the membrane from the bony underside of the ribs.  It's thin and papery, and once you get a good grip they should come off as a sheet.  The membrane is chewy, and removing it allows the spice rib to work its magic.
  • Sprinkle a few tablespoons of the spice rub on each side of the ribs and really rub it in using your hands.  Ideally, let the ribs marinate for an hour or overnight in the fridge.  If you don't have time, they will still be delicious.  Any extra spice rub can be saved for another time.
  • Preheat oven to 350F, with wire rack in the middle position.
  • Place the ribs on a baking sheet lined with parchment paper or aluminum foil.  Drizzle ribs on each side with a little bit of olive oil.
  • Place the ribs meat side down on the baking sheet.  Cook for 2 hrs, turning them over after an hour. 
  • Let the meat rest for a few minutes before slicing.  Enjoy!
