Recipe: Southwest Salad


This is one of my favourite salads. It's just so refreshing! A perfect compliment to so many dishes, especially spicy or smoky barbecued meat. YUM!  It takes a bit of effort to dice everything, but it's a great opportunity to brush up your knife skills!


Serves 6-8

-1 English cucumber, seeded and diced
-3 avocados, seeded and diced
-1 medium red onion, diced
-4 plum tomatoes, diced
-2 cups of frozen corn, thawed and drained
-1/4 cup of fresh chopped cilantro
-juice of 2 limes
-1/4 cup of olive oil
-1 tsp of salt
-1/4 tsp of black pepper
-1/2 fresh jalapeno seeded, diced (optional)

  • Combine all ingredients in a large bowl.  Stir to combine. Enjoy!
